Assigned to Copperleaf Line & Terrace Prep Team 
The Production Cook will work with the team of line cooks and Sous Chefs and support the preparation of all food items needed throughout the kitchen. Cold and hot food production associated to all menus with emphasis on large batch prep tasks.

Our kitchen is focused on cooking from scratch at a fast pace that demands a high level of attention to detail, focus and commitment to maintain the quality that our guests expect. The Prep Cook will always conduct them self in a manner which supports the growth and development of the team, culture, and cuisine.

 

Skills needed to be successful in this role- Production Cook:

    • Detailed understanding of cold food preparation, cleaning, chopping storage of common vegetables, dressing preparation, station cleanliness
    • Must work well in a good cooperation with a team
    • Work assigned tasks as directed by senior cooks and chefs
    • Developed knife skills – can work with a knife safely with quickness & accuracy
    • Developed knowledge of basic cooking techniques; braising, roasting, sautéing, vegetable care, preparation and storage, organization of storage areas
    • Detailed understanding of dish machine operation and manage the flow of the dish station as directed by chefs
    • Willingness to assist chefs and cooks in all tasks and move easily from one task to the next with the ability to multi-task

Qualifications, Education, and/or Experience:

    • Necessary State Food Handler’s License(s) ; Food Handlers Card, Serve Safe Certified
    • Ability to read and comprehend simple instruction, short correspondence, recipes and memos
    • Ability to effectively interact in one on one and small group situations with supervisors & other employees of the organization
    • Must possess and demonstrate safe knife skills
    • Has the ability to adjust preparations for flavor, and accommodate customer’s needs in a timely manner

 

Production Cook Essential Duties and Responsibilities:

  • Will work assigned line Prep, banquet Prep and or Continental station with a sense of quality control, refined technique and urgency at all times
  • Utilizes specification sheets to prepare daily preparation requirements, maintains par levels of necessary items
  • Prepares current and new menu recipes under direction of supervisor
  • Reads and interprets recipes accurately
  • Ensures attractive, consistent presentations of all food items supplied to station cooks
  • Interacts professionally and mindfully with supervises, line cooks & stewarding team to monitor quality, presentation and consistency of food items prepared
  • Handles all needs and accommodates customer requests in a timely manner
  • Responsible for ensuring presentation standards are meet for all hot and cold items
  • Will participate in all areas of the kitchens cleanliness and organization
  • Assists with product inventories, ordering and receiving of procedures
  • Responsible for team maintenance of grooming standards
  • Responsible for team adherence to standards for sanitation and safe food handling
  • Responsible for all opening and closing kitchen procedures
