Assigned to Cedarbrook Lodge Banquet Breakfast & Lunch Station

The Cook I for the Continental Breakfast & Lunch will work with the team of Sous Chefs and support cooks in the role preparing our Pacific Northwest Continental Breakfast Buffet Hot Breakfast Buffet, AM & PM Event Break Menus, Staff Meal from the Banquet Kitchen.

Our kitchen is focused on cooking from scratch at a fast pace that demands a high level of attention to detail, focus and commitment to maintain the quality that our guests expect. The Banquet Cook I will always conduct them self in a manner which supports the growth and development of the team, culture, and cuisine.

Qualifications, Education, and/or Experience:

  • 3+ years in industry of equal caliber employment, 5 star hotel experience a PLUS
  • Necessary State Food Handler’s License(s); Food Handlers Card, Serve Safe Certified
  • Experience with kitchen prep cooking up to 300 people with a help of a small team
  • Ability to read and comprehend simple instruction, short correspondence, recipes and memos
  • Ability to effectively interact in one on one and small group situations with supervisors & other employees of the organization
  • Knowledge of specialized equipment: Mastering of slicer, Robo-coup, Hobart, convection ovens, combi ovens
  • Must possess heightened knife skills
  • Ability to adjust preparations for flavor, and accommodate customer’s needs in a timely manner with a willingness to exceed guest satisfaction
  • Ability to improvise and anticipate station and team needs

Skills needed to be successful in this role:

  • Detailed understanding of intermediate to advanced level scratch kitchen operations
  • Must be a MORNING PERSON and enjoy a fast-paced kitchen first of the day.
  • Ability to prepare food for up to 300 guests on a flow during shift hours; 5am to 4pm
  • Must work well in a good cooperation with a team while under pressure
  • Highly Developed knife skills – can work with a knife safely with quickness & accuracy
  • Must possess the ability to adjust preparations for flavor, presentation and accommodate guests needs in a timely manner
  • Has good understanding of current food allergies and how to modify recipes to accommodate guest needs.
  • Highly developed knowledge of all major cooking techniques; mother and minor sauces, braising, roasting, sautéing, soups and stocks
  • Must be organized and work with attention to all details of food safety, sanitation and organization
  • Must be solution focused minded
  • Mentors team member next in line
  • Willing to carry out additional tasks as assigned by supervisor above and beyond the job description.

Cook I Essential Duties and Responsibilities:

  • Work assigned station with a sense of quality control, refined technique and urgency preparing breakfasts hot and cold foods for buffet and plated events, lunch hot and cold food for buffets and plated events, and or staff meal consisting of hot and cold food items all freshly prepared.
  • Utilizes specification sheets to prepare daily preparation requirements, maintains par levels of necessary items
  • Prepares new menu items under direction of supervisor
  • Ensures presentations are attractive, consistent and thoughtful for all items and meet CBL standards.
  • Interacts professionally and mindfully with supervises, line cooks & stewarding teams
  • Handles and accommodates customer requests in a timely manner
  • Sets up, re-stocks, maintains, and cleans food preparation areas in a timely manner with a sense of urgency.
  • Participate in all areas of the kitchen’s cleanliness and organization
  • Reads and interprets recipes accurately
  • Assists with product inventories, ordering, receiving and storage procedures
  • Responsible for personal maintenance of grooming standards and care of personal tools used during work hours
  • Participates with team adherence to standards for sanitation and safe food handling
  • Responsible for all opening and closing kitchen procedures pertaining to position/station working
  • Carries out additional tasks as assigned by supervisor
