Line Cook Copperleaf Line AM and or PM Shifts


Assigned to Copperleaf Line for Lunch and/or Dinner service

The Cook 1 will work with the team of Sous Chefs and support cooks in the role of Line cooking for Lunch or Dinner and IRD as needed in production associated to all A la Carte menus.

Our kitchen is focused on cooking from scratch at a fast pace that demands a high level of attention to detail, focus and commitment to maintain the quality that our guests expect. The Cook 1 will always conduct them self in a manner which supports the growth and development of the team, culture and cuisine

Qualifications, Education, and/or Experience:

    • 3+ years in industry of equal caliber employment- Hotel experience a PLUS
    • Necessary State Food Handler’s License(s); Food Handlers Card, Serve Safe Certified
    • Experience in fine dining line cooking which includes multi course & chefs tasting menu formats for up to 100 or more covers each night
    • Ability to read and comprehend simple instruction, short correspondence, recipes, and memos
    • Ability to work at a fast pace with a sense of urgency while maintaining fine details and composure
    • Ability to effectively interact in one on one and small group situations with supervisors & other employees of the organization
    • Knowledge of specialized equipment: Mastering of slicer, Robo-coup, Hobart, convection ovens, combi ovens vac machines sous vide cooking
    • Must possess heightened knife skills
    • Ability to adjust preparations for flavor, and accommodate customer’s needs in a timely manner with a willingness to exceed guest satisfaction
    • Ability to improvise and anticipate station and team needs
    • Must work well in a good cooperation with a team
    • Able to start work as a solo position
    • Able to work shift at times as a solo position
    • Familiar with preparing all Breakfast and Lunch and Dinner Menus, Manage Tickets, ability to prepare proteins items to pre-determined temperatures with precise accuracy
    • Highly Developed knife skills – heightened ability to produce and teach knife skills with quickness & accuracy
    • Highly developed knowledge of all major cooking techniques; mother and minor sauces, braising, roasting, sautéing, sous vide, pasta production/development
    • Working knowledge of entry level butchering techniques of all major proteins with emphasis on developing meat and fish fabrication & portioning skills
    • Knowledge of pastry production a plus
    • Willingness to develop other cooking skills and prepare new menu items and new menus when needed/as directed
    • Mentors team member next in line
    • Always maintain clean and organized station and storage locations in us
    • Carries out additional tasks as assigned by supervisor

Cook I Essential Duties and Responsibilities:

    • Work assigned Line Station(s) with a sense of quality control, refined technique, and urgency at all times
    • Prepare hot food and cold items in accordance with recipes and standards for lunch and dinner menus for the restaurant line and banquet areas.
    • Utilizes specification sheets to prepare daily preparation requirements, maintains par levels of necessary items
    • Prepares new menu items under direction of supervisor
    • Ensures attractive, consistent presentations of food items, both buffet and plated
    • Interacts professionally and mindfully with supervises, line cooks & stewarding teams to contribute to quality, presentation and consistency of food items prepared
    • Handles needs and accommodates customer requests in a timely manner
    • Sets up, re-stocks, maintains, and cleans food preparation areas
    • Responsible for ensuring presentation standards are meet for all hot and cold items
    • Will participate in all areas of the kitchen’s cleanliness and organization
    • Reads and interprets recipes accurately
    • Assists with product inventories, ordering and receiving of procedures
    • Responsible for personal maintenance of grooming standards and care of personal and company tools used while on shift
    • Responsible for team adherence to standards for sanitation and safe food handling
    • Responsible for all opening and closing kitchen procedures
    • Carries out additional tasks as assigned by supervisor
